If you've used Things Touch (TT) for a while, you'll have noticed that the Next list can become cluttered/overwhelmed by active projects and/or tasks.
How can we rectify this situation? The good news is that TT has the ability to "hide" items from the Next view.
Let us get into the technicalities.
In this case the solution is very simple: by just moving the to-dos to either the Scheduled or the Someday list, these will be removed from the Next view.

First of all we have to clarify what a project is. According to David Allen a project is a task, which can't be completed in one single step and hence implies at least a 2 sub-tasks list - don't think about a project in the traditional way ;)
Active projects become inactive by moving them either to Scheduled or to Someday.
The following particularities "unhiding-wise" have to be kept in mind though:
Scheduling the project will let TT show up all project items in Next and the Today List at start date, without exception.
If you want to restrict the display of projects' single items in Today, you should move the project to Someday instead. IMHO it doesn't make sense to schedule a project for a specific date and to set the due date of single tasks before that date ... I'll leave the pondering to you ;)
Hence, after having completed the next important to-dos in a project and if you want to "hide" the project again, you must move it back e.g. to Scheduled.
Setting due dates for single project related tasks will let TT show up the whole project in Next as soon as the first due date is reached and only the due items in Today.
That's a nice difference in comparison to the behaviour of Scheduled. Think about it and take advantage of it.
Hence, after having completed the next important to-dos in a project and if you want to "hide" the project again, you must move it back e.g. to Someday.
There you go, Next looks much leaner/more tidy now :)
